"Dear Coco," it starts. A love letter to a granddaughter. Not with pen and paper, but with velvet, espresso and pencil. Celeste Shaw-Coulston — local entrepreneur and owner of Chaps Diner & Bakery, Vinegar Goods, and Lucky Vintage — opened Cafe Coco in downtown Spokane in late July. Known for her beautiful spaces and bleeding heart, Shaw-Coulston has created a haven on East Main Avenue, pairing Chaps' bakery treats and cappuccinos with moments of peace and rest.

I accepted the job as a food writer at the Inlander when I was living with my parents in Chicago. After stints in southeast Asia and on the East Coast, I thought I was finally committed to staying in the Midwest. But a job is a job, and this seemed like a pretty cool job, so I got ready to move for the sixth time in four years. As soon as I started to second-guess, Inlander editor-in-chief Nick Deshais forwarded me a message from Kate Lebo. She and her husband, Sam Ligon, both established and award-winning authors and teachers, were hosting an intensive food writing workshop at a goat farm in Stevens County. They hoped to connect local food writers and food suppliers over creative writing classes, farm-to-table meals and lots of quality time with goats. I've been glad I took the job ever since.

When Hanncel Sanchez was earning her degree in women and gender studies at Eastern Washington University, she volunteered her extra time at a sexual assault helpline. Even though she knew sexual assault was an issue for Spanish speakers, she noticed that they weren't the ones calling in. In 2018, Sanchez founded Mujeres in Action, or MiA, a nonprofit that provides bilingual crisis intervention and culturally specific care, safety planning, emergency housing, and companionship services to Latinx families facing abusive relationships at home. (MiA prefers the non-gendered term Latinx, which will be used throughout this profile.) They are advocates for survivors at doctors appointments, in courts and with employment searches, while also trying to hold government agencies responsible for language access to public information.

The intersection of Second Avenue and Division Street in Spokane has a reputation. It's a major thoroughfare, just a few blocks from the downtown core. It's the first thing many visitors see after exiting the interstate, and one of the most heavily-trafficked parts of Spokane, with more than 30,000 cars passing through each day. Mayor Nadine Woodward describes it as "the main gateway into our city." It's also the epicenter of a humanitarian crisis. Suffering is everywhere and impossible to ignore. People in torn clothes and visible states of distress wander the area at all hours, looking lost. Screams and fights echo through the night. ... It's a hotspot for overdoses, and a frequent backdrop for evening TV news segments about drug arrests or local businesses fleeing downtown.

When Dave Musser walks to work, he knows just about everyone living along the three blocks between his house and Bellwether Brewing. Back in 2015, Musser and his wife, Brianna, opened the brewery, hoping it would help neighbors get to know one another. A happy commute to work proves that it did. So after eight years of success in the Emerson-Garfield neighborhood, the Mussers started looking for another "hole in the wall" spot to build a spin-off taproom and make new friends. Instead, they found a 100-year-old bank building — converted into a vintage shop and overflowing with dusty antiques and slat board — for sale on Hillyard's main strip along Market Street.

Chef CJ Callahan's first specialty was cinnamon toast. He was 9 years old, cooking for his sisters while his mom served tables at a seafood restaurant in Arkansas. Take a piece of white bread. Spread evenly with butter. Layer carefully with sugar first, then cinnamon (never mixed). Put it under the broiler. Watch out because the back burns hot — rotate the toast after four minutes to ensure it browns evenly. Make every piece look the same. Make your sisters very happy.
